RED VELVET (the festive one)

I always wondered how the red color can be achieved in a velvet red cake..

Velvet red is a color that has been associated with a range of emotions and sensations throughout history. From evoking feelings of passion and love to increasing appetite and energy levels, this color has a powerful impact on our mind and body. You knew that;



And of course what else since Christmas is approaching and our love is blooming? Emotions overflow and the mood is revived with the colors of the holidays. Grab your spatulas, collect ingredients, cake pans and let's make this recipe that will beautify the holiday table or some visit where you will take it as a gift! Ready?


MATERIALS:


For the Cake:

160 g of sunflower oil

110 gr. unsalted butter, melted

400 gr. crystal Sugar

2 large eggs

250 ml buttermilk*

2 tbsp Nielsen & Massey vanilla extract

1 teaspoon of white vinegar

2 tablespoons red food coloring

300 gr. flour for all uses

3 tablespoons unsweetened cocoa powder

1 teaspoon of baking soda

1 teaspoon of salt


Cream cheese frosting:


120g cream cheese, room temperature

240g powdered sugar

3 tablespoons of milk

1/2 teaspoon vanilla extract


*TIP 1

*You can make your own buttermilk with milk and vinegar. Measure out 250ml of milk, then remove a tablespoon. Then add a tablespoon of vinegar and stir to combine. Let it sit for 10 minutes to thicken. ( And yes, keep the separate 1 teaspoon of vinegar in the recipe ).

*You can also use 250ml plain yogurt.

THE RECIPE:

  1. Preheat the oven to 175 C in the air.

  2. Mix our dry ingredients (flour, cocoa powder, baking soda and salt) and set aside.

  3. In the mixer, combine the oil, butter and sugar. You can do this by hand or with an electric mixer with the whisk attachment. Mix for 1-2 minutes on medium speed until well blended.

  4. Add your eggs, then the buttermilk*, vanilla and vinegar.

  5. Finally, we add the food coloring.

  6. On low speed, add half of the dry ingredients and mix to combine. Then scrape down the bowl and mix in the other half.

  7. Now prepare your form, preferably before placing the mixture. Give your pan a light coat of nonstick oil spray, then use a thin pastry brush to spread it all over, getting it into all the nooks and crannies. We also make a coating with flour or breadcrumbs, uniform and everywhere.

  8. Then pour in your mixture. If you're using a 12-cup pan like the elegant, you'll use up all the batter.

  9. Bake for 45-50 minutes until a toothpick comes out clean.

  10. Let it rest for about 15 minutes, then turn it out onto a wire rack and let it sit for another 30 minutes to cool completely.

Cream cheese frosting

  1. Mix together the cream cheese and powdered sugar, adding the milk little by little.

  2. Once homogenized, add the vanilla.


*The consistency should be a little thinner than craft glue. If too thick, add 1/2 tablespoon of milk at a time until smooth. If it is too thin, add 1 tablespoon of powdered sugar at a time until it thickens.


Pour over the cooled cake and serve!

Store in the refrigerator for up to 5 days.
