Looking for a recipe for an otherwise easy cake with significant nutritional content? The cake recipe that follows is delicious, mixer-free, and made with just one utensil. It is also juicy and beautifully highlights the coexistence of the orange with the traditional tahini. So there you have it!
MATERIALS:Tahini
For the Tahini Cake:
250 gr. natural tahini
300 gr. granulated sugar
400 gr. orange juice and zest from an orange
400 gr. flour
1 tbsp baking powder
1 tbsp soda
Zest of 1 orange or 1 tbsp. orange extract from Nielsen Massey
1 tablespoon vanilla extract Nielsen Massey
For the Ganache :
150 gr. powdered sugar
Juice from half an orange
Sesame seeds and orange zest for the topping.
THE RECIPE:
Cake:
Preheat the oven to 180°C (350°F) fan.
In a large bowl, mix the tahini, juice, zest and sugar.
Add the flour, baking powder, soda and vanilla and mix well with a spatula.
Finally, transfer to a well floured form.
Bake in a preheated oven, 180 air, for 50-60 minutes, checking the doneness with a toothpick. Leave for 15-20 minutes and unmold!
Invert the dish and leave it on a rack for another 10 minutes. Tap the mold gently to encourage it to come out. Allow the cake to cool completely on your wire rack and this tahini orange cake recipe is ready to be remembered.
Ganache:
Add all ingredients to a small bowl and mix until smooth.
Drizzle the ganache over the cake and serve immediately although I would also add the orange zest along with the sesame seeds for the extra touch.

**Grease your mold with butter, or oil spray and then sprinkle it with commercial breadcrumbs. You will see how easily even the most difficult design comes out of the mold, while you will be impressed with the cleanliness of the cake.

The cake can be kept in an airtight container at room temperature for 1 day, in the refrigerator for 5 days, or in the freezer for up to 1 month.
