👩‍🍳 Instructions (Step-by-Step)

  1. Preheat the oven to 160°C (fan-assisted).

  2. Melt the butter and use a pastry brush to thoroughly coat the inside of your Nordic Ware Bundt pan. As always, we recommend using Carlex non-stick baking spray for an even better result — you can find it here.

Sift flour directly into the pan, turning it gently to coat every surface well. For something different, you can try using fine breadcrumbs instead of flour for dusting. Tip out any excess.

  3. Beat the butter and sugar together until light and fluffy. Add the eggs one at a time, then mix in the Nielsen-Massey vanilla bean paste. Finally, add the self-raising flour, baking powder, bicarbonate of soda, and salt. Mix until just combined and smooth

  4. Bake for 40–45 minutes, or until a skewer inserted into the center comes out clean. Let the cake cool in the pan for 15 minutes, then carefully turn it out onto a wire rack to cool completely.

Place the strawberries and vanilla in a bowl, stir gently, and let them marinate for a few minutes to release their flavor.

  5. Whip the cream with the icing sugar until it holds soft peaks. Slice the cake horizontally in half. Spread the bottom layer with the raspberry jam, followed by the whipped cream. Arrange the marinated strawberries on top, then gently place the second half of the cake over them. Dust with icing sugar and fill the center with fresh strawberries for a stunning finish.
