Pumpkin is in season for testing. It offers a sweet and very lively taste that, combined with the spices, gives images of autumn. The cake pan used is Harvest by Nordicware.



INGREDIENTS: Pumpkin Cake Recipe


For the Cake:

  • 230g butter, soft.

  • 350 gr. white granulated sugar.

  • 3 eggs, at room temperature.

  • 1 ½ teaspoon vanilla.

  • 340 gr. pumpkin puree (you clean the pumpkin, cut it, boil it, mash it).

  • 170 gr. yogurt, at room temperature.

  • 385 gr. + 2 tablespoons of all-purpose flour, sifted.

  • 2 teaspoons pumpkin pie spice **.

  • 2 ¼ teaspoon baking powder.

  • ½ teaspoon of baking soda.

  • ¾ teaspoon of salt.

  • 1 package of dulce de leche for sauce (better to buy from the market).

  • totally optional, it's delicious and no sauce.

THE RECIPE: Pumpkin Cake Recipe

  1. Preheat the oven to 170 degrees, in the air.

  2. In the mixer, mix the softened butter and the granulated white sugar.

  3. Add the eggs and vanilla one at a time and mix until pale and fluffy.

  4. Then mix the pumpkin puree and yogurt.

  5. In a separate bowl, mix the flour, pumpkin pie spice**, baking powder, soda and salt.

  6. Add the solid ingredients to the liquids little by little and mix until everything is homogenized.

  7. Spray a Nordicware 10-12 cup mold with non-stick spray .

  8. Pour the mixture into the mold and bake the cake for 45-50 minutes or until a toothpick comes out clean from the center or with a few crumbs.

  9. Let the cake cool in the pan for at least 20 minutes.

  10. Then, invert the pan onto a wire rack and let the cake cool completely.

Once the cake has completely cooled, pour over the dulce de leche (which you will find ready-made in the market) and serve!


Store leftovers in an airtight container for up to four days.


TIP 1

**Pumpkin Pie Spice

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • ¼ teaspoon ground ginger

  • ⅛ teaspoon ground cloves
