White Chocolate and Raspberries Bundt Cake
When the fruit juices melt in the mouth and when the fresh strawberries add cool nuances, your cake is a dream.
INGREDIENTS: Recipe for raspberry and white chocolate cake
For the Cake:
175 gr. butter in temp. room
3 eggs
220 gr. sugar
325 gr. wheat flour
2 tbsp baking powder
1/2 tsp salt
300 gr. milk
Juice of one lemon
2 Nielsen & Massey vanillas
100 gr. white couverture ground in a blender
150 gr. frozen raspberries
For the glaze:
100 gr. white blanket
75 gr. whipping cream
Strawberries
Powdered sugar
THE RECIPE: Raspberry and white chocolate cake recipe
First, mix the milk with the lemon juice and set aside. It will look like it's "cut", that's what we want.
In the mixer, beat the butter with the sugar for 5-6 minutes at high speed until they become fluffy.
Add the eggs one by one, waiting for each egg to be incorporated.
Mix the flour, salt, baking powder, vanilla, salt in a bowl and add it alternately with the milk in the mixer, beating at medium speed, starting and ending with the flour mixture.
Add the ground couverture and raspberries and mix gently with a spatula to incorporate.
Transfer to a well-buttered and floured cake tin and bake in a preheated oven, 180 degrees, for 50-55 minutes checking with a toothpick.
