Every time I see berry cake I want to try it and today it will be done. A rich cake, with ingredients that leave a unique taste.
White berries.. black berries
INGREDIENTS: Recipe for raspberry cake
For the Cake:
335 gr. butter in temp. room
225 gr. cream cheese
500 gr. sugar
6 eggs
1 tbsp vanilla extract
1/4 Nielsen Massey almond extract
375 gr. self raising flour of
370 g of berry puree
For the glaze:
335 gr. powdered sugar
105 gr. berry puree
1 tbsp bourbon
THE RECIPE: Raspberry cake recipe
Let the butter and cream cheese come to room temperature and preheat the oven to 175 degrees.
Beat the butter and cream cheese until completely smooth.
Add the sugar and beat until light and fluffy - about three minutes.
Add the eggs, one at a time beating after each addition.
Add the vanilla and almond extracts and mix lightly.
Slowly add the flour and beat on low until everything is incorporated.
Fold in the raspberry puree.
Pour into a well-buttered tin and tap on the counter to remove any air bubbles. We used Anniversary . which holds the whole mixture with ease.
Bake for 1 hour and 15 - 20 minutes or until golden brown on top and a knife inserted comes out clean.
Let the cake cool for 15 minutes and then remove from the mold.
Make the glaze by beating the powdered sugar with the raspberry puree and the bourbon. Mix until there are no lumps.
The raspberry cake is ready..enjoy

TIP
**Grease your mold with butter, or oil spray and then sprinkle it with commercial breadcrumbs. You will see how easily even the most difficult design comes out, while you will be impressed with the cleanliness of the cake.
